Ok, its quite easy to explain actually. To form, ice has to have a start point to form. this is called a nucleation point. If you make sure there are no bubbles in the bottle when you put it in the freezer, ice can't form, as glass is very smooth, (no plastic bottle please). When you remove the bottle and give it a tap or something, bubbles appear and ice starts to form. Done.
